Overview

From incident detection to risk containment and product recall: practical skills for effective response and prevention of recurrence.

  • This training course aims to develop participants’ practical skills in responding to food safety incidents and managing nonconformities that may affect product safety and consumer health through immediate containment, incident investigation, and appropriate corrective actions.
  • The course focuses on incident assessment, initial decisions concerning the isolation of affected products, Root Cause Analysis (RCA), development of corrective action plans, and prevention of recurrence. It also covers product traceability, withdrawal and recall procedures, and communication with relevant stakeholders.
  • Through an integrated practical case study involving a potentially unsafe food batch that has been partially distributed, participants practise determining the scope of affected products, making containment decisions, investigating underlying causes, and preparing incident response and recall arrangements when necessary.
  • Practical exercises are based on general professional principles, with emphasis on compliance with the regulatory requirements and procedures of the competent authorities in the relevant country.

Who Should Attend

  • Food Safety and Quality Assurance Officers and Supervisors.
  • HACCP and Food Safety Management Team Members.
  • Food Production and Operations Managers and Supervisors.
  • Product Traceability, Warehousing, and Food Supply Chain Personnel.
  • Crisis Management and Incident Response Team Members in Food Companies.
  • Food Inspection, Compliance, and Related Industry Professionals

Learning Outcomes

  • By the end of the course, participants will be able to: Assess food safety incidents and determine appropriate immediate containment measures for affected products.
  • Apply Root Cause Analysis (RCA) techniques to identify underlying causes of food safety incidents.
  • Develop corrective action plans with defined responsibilities, timelines, and effectiveness verification.
  • Use batch information and distribution records to trace products and determine the scope of affected batches.
  • Differentiate between product withdrawal and recall and develop essential response and communication arrangements in accordance with local requirements.
  • Conduct a simulated food safety incident investigation and prepare a report covering containment decisions, corrective actions, traceability, and recall measures.

Course Outline

  1. Module 1: Food Safety Incident Assessment and Immediate Response

    • Types of food safety incidents and sources of incident reporting. • Assessment of incident severity, risk, and potential impact. • Immediate containment measures and isolation of potentially affected products. • Incident documentation, assignment of responsibilities, and escalation procedures.

  2. Module 2: Incident Investigation, Root Cause Analysis, and Corrective Actions

    • Evidence collection and incident investigation. • Application of Root Cause Analysis (RCA) techniques. • Distinguishing immediate corrections from corrective actions. • Developing corrective action plans and verifying their effectiveness to prevent recurrence.

  3. Module 3: Product Traceability, Withdrawal, and Recall

    • Batch traceability principles and integration of production and distribution records. • Identification of affected products and distribution locations. • Withdrawal and recall decisions based on risk assessment and applicable regulatory requirements. • Communication with competent authorities and stakeholders, response documentation, and effectiveness verification.

  4. Module 4: Practical Food Safety Incident Management Simulation

    • Case study involving a potentially unsafe food batch that has been partially distributed. • Determining the scope of affected products and making containment decisions. • Investigating root causes and preparing corrective action plans. • Simulating traceability and recall procedures and preparing a final incident report.

Assessment

Practical assessment through a simulated food safety incident. Participants assess risks, determine immediate containment measures, conduct root cause analysis, prepare a corrective action plan, trace affected products, propose withdrawal or recall actions when necessary, and submit a concise incident report.
